
Our friend Nancy made this beautiful and delicious strawberry tart and I have to share the recipe with you!
Crust:
In food processor or mixing bowl, combine 3/4 cup ground almonds, 1/2 cup softened butter, 1/2 cup sugar, and 1 cup GF oat flour. Add one large egg yolk,one teaspoon vanilla extract, and one teaspoon almond extract.
Blend until dough holds together. Press onto bottom and sides of 11-inch tart pan with removable bottom.
Bake at 375 degrees for about 20 minutes or until golden brown. Cool.
Filling:
8 oz cream cheese, softened.
3 tablespoons sugar
2 tablespoons amaretto liqueur
1 teaspoon vanilla extract
1 teaspoon almond extract
Mix all ingredients until smooth and spread evenly on cooled tart crust. Chill until firm, about 30 minutes.
Apricot Glaze:
In small saucepan, mix:
1/2 cup apricot preserves
1 tablespoon butter
1 tablespoon fresh lemon juice
2 tablespoons amaretto liqueur
mix over low heat until hot. Cool and set aside.
Topping:
3 to 4 cups fresh strawberries, sliced.
Arrange fruit in a circular pattern on filling 1 or 2 hours before serving. Brush fruit with glaze.
Serve slightly chilled or at room temperature.
